A sous vide machine is an immersion circulator. It clips onto a pot, heats the water to a set temperature and keeps it moving while food cooks in a sealed bag. The differences come down to wattage, how much water it can handle, whether it has app control and how much room it takes in a drawer.

The six machines below run from a compact 800 watt model to a 1300 watt Wi-Fi unit. Sizes, power and features come from each product’s listing page. We have not used these machines ourselves. Performance claims are the makers’ own.

Care and Setup

  • Use a pot deep enough to cover the minimum water line.
  • Seal food in bags and keep them under the surface.
  • Rinse or wash the skirt or sleeve where the maker allows it.
  • Dry the unit before storing it.

Mistakes to Avoid

  • Trusting one wattage figure when the listing shows two.
  • Using a pot too shallow for the unit’s clamp and water line.
  • Letting bags float above the water.
  • Assuming every app feature is free.

Do I need Wi-Fi?

No. Several models here have on-board controls. Wi-Fi only adds phone control.

Does more wattage matter?

Higher wattage generally heats a large pot faster. For a small pot, a lower-wattage unit may be enough.
